Where can I make my own bourbon in Cincinnati

The founders of Newtown-based WoodCraft Bourbon Blender are preparing to open a new downtown franchise where customers will be able to blend their own bourbons.

Willow Run, named for the Cincinnati-area Willow Run Distilling Co. founded in 1865, is scheduled to open Thursday at 645 Walnut St., across from the Aronoff Center.

September is National Bourbon Heritage Month

The opening will coincide with National Bourbon Heritage Month, established in September 2007 by the United States Senate to honor the tradition and heritage of bourbon as an indigenous American spirit.

The distillery, now called Willow Run, was founded by William J. McRoberts Jr., a distiller who smuggled slaves from Kentucky to Cincinnati as a conductor on the Underground Railroad, according to Doug Hall, WoodCraft’s CEO, who also co-founded WoodCraft’s sister company, Brain Brew Distillery in Newtown.

“We’re restoring bourbon to its rightful roots in the Queen City,” Hall told The Enquirer, noting that in 1850, about 85 percent of the whiskey shipped around the country came from Cincinnati, which was the sixth-largest city in the country.

All bourbon is whiskey, but not all whiskey is bourbon

Bourbon is a type of barrel-aged whiskey that must contain at least 51% corn. Wheat, barley, rye, and other grains are commonly used to complete the mash bill or recipe, bourbon recipe.

In addition to learning about the history of bourbon and its roots in Cincinnati, Willow Run patrons will be able to choose from a variety of bourbons and signature cocktails, as well as take advantage of “personalized bourbon experiences,” including the opportunity to mix their own bourbons.

Willow Run will use freestanding bourbon mixers to blend Woodcraft bourbons with different types of wood to create different flavor notes, such as pepper, spice, and caramel.

There are six different types of wood you can use to make your own bourbon.

Half a dozen species of wood will be available for the blend, including cherry, maple and four different types of oak.

Customers can order a specially prepared blend of bourbons on site and have it bottled for about $50, he added.

The downtown location will be WoodCraft’s second location to serve specially selected bourbon-infused spirits, following Barrels & Billets Bourbon Experience in Louisville.
